Green Canapés (Crostini Verdi)

Ingredients
- a big bunch of parsley
- a clove of garlic
- good Tuscan extra-virgin olive oil as needed
- a pinch of salt
- chili pepper (optional)
- 2 tablespoons mayonnaise (optional)
- about 20 small slices of baguette-style Tuscan bread
Preparation
- Finely chop garlic, parsley and a bit of chili pepper (optional) then put mixture in bowl
- Add enough olive oil and a pinch of salt until mixture becomes a spread
- Optional - add 2 tablespoons of homemade mayonnaise (store-bought is fine too, but homemade is better)
- Spread on small slices of fresh Tuscan bread and serve
This is a more modern spin on a simple recipe. I make the mayonnaise myself, which is certainly better but not as easy to digest as store-bought mayo. My family of origin didn’t actually know this recipe. When I was a newlywed and my cooking was a guessing game, I copied this recipe from a magazine and prepared this “new starter” for my parents. To my great surprise, they loved it! And I was suddenly promoted to expert cook. I still remember being so pleased with it and especially how much my mom was pleased. She was so very proud of her daughter who, in her mind, had become such a good cook, while it was actually all thanks to, or almost all thanks to, that magazine.
